Join my crazy food life and healthy mac and cheese

Hi all, I have a lot to say and don't know where on earth to start so I won't! Ha! Ok so I am just going to post and as things come up they will come out in no orderly fashion- so there it is! Ok so this week we had some fun meals- of course based on my Bountiful baskets. I love to participate in what I would call "my couponing". I get a lot of great produce for not much $ and get to branch out with my foods too! It's great- if you are interested to do the same just check out Oh Ya and one more thing............I am not a photographer- as if that needs mention. So on with the FOOD!
 This is my own creation of healthy macaroni and cheese. I use whole wheat or brown rice pasta from bulk and cook and drain- then I puree some cooked sweet potato (about 1/2 C.) and add frozen or steamed broccoli and shredded chicken. I make a white sauce from 2 Tbsp butter, 2 Tbsp soft white wheat and barley flour mixture (this is home ground from my mill) and 2 C milk till thick then take off the heat and add sweet potato and 2 C sharp cheddar then and all other ingredients. I then add some older homemade wheat bread crumbled on top and broil for a couple min.  The kids like it and i am glad about the nutrition.  Although I would like to be able to add a few vegetables that the littles don't already like- since sweet potato and broccoli are already favorites around here.
